Late Shelf Life Saturation of Golden Delicious Apple Parameters: TSS, Weight, and Colorimetry

This work aims to estimate the shelf life of Golden Delicious apple fruit stored at room temperature by determining changing trend in color every week using a non-destructive measurement method. Moreover, study will measure changes weight loss (Δm) and total soluble solids (TSS) contained apple. The research focuses on last stage ripening effect affecting consumer behavior; therefore, examined fruits were picked end season an ambient controlled laboratory conditions for six weeks, 24 °C under 60% RH relative. Color measurements performed with portable sensor, which provided simple effective examination method case appropriate number samples. findings showed significant increase TSS over time. varying (ΔE) chroma (C*) parameters increased prolonged storage duration, meaning that apples became darker more color-saturated storage. While follow linear tendency given period, deteriorating characterized exponential asymptotic regression. It was found although moisture content reaches its limit value during drying process apples, saturation coordinates allows determination consumption loss. limits (70.97; 12.77; 56.34 CIELAB L*; a*; b*), dominant part (b*), growth rate curves allow accurate characterization from visual aspect, thus improving critical analysis factors after harvest. By assessing characteristics technology, customers may quickly evaluate quality make better decisions their purchase.
